Ingredients

  • For the Chicken Tinga:
  • 2 boneless, skinless chicken breasts 🍗
  • 1 tbsp olive oil 🫒
  • 0.5 onion, thinly sliced 🧅
  • 2 cloves garlic, minced 🧄
  • 1 cup crushed tomatoes 🍅
  • 2 chipotle peppers in adobo, chopped 🌶️
  • 1 tsp adobo sauce (from chipotles) ✨
  • 0.5 tsp cumin
  • 0.5 tsp smoked paprika 🌶️
  • 0.5 tsp oregano 🌿
  • 0.5 tsp salt 🧂
  • 0.25 tsp black pepper
  • 0.5 cup chicken broth 🍲
  • For the Rice:
  • 1 cup long-grain white rice 🍚
  • 2 cups water or chicken broth 💦
  • 0.5 tsp salt 🧂
  • 1 tbsp olive oil 🫒
  • For the Beans:
  • 1 can (15 oz) black or pinto beans, drained and rinsed 🫘
  • 0.5 small onion, diced 🧅
  • 1 clove garlic, minced 🧄
  • 0.5 tsp cumin
  • 0.5 tsp oregano 🌿
  • 0.5 cup chicken broth 🍲
  • Salt to taste 🧂
  • For Serving:
  • Fresh cilantro, chopped 🌿
  • Avocado slices 🥑
  • Lime wedges 🍋
  • Warm corn tortillas (optional) 🌮

Instructions
