Ingredients

  • For the Pollo Guisado:
  • 4 bone-in, skinless chicken thighs 🍗
  • 1 tbsp olive oil 🫒
  • 0.5 small onion, diced 🧅
  • 0.5 green bell pepper, diced 🌶️
  • 2 cloves garlic, minced 🧄
  • 1 tbsp tomato paste 🍅
  • 1 small Roma tomato, chopped 🍅
  • 0.5 tsp cumin
  • 0.5 tsp oregano 🌿
  • 0.5 tsp smoked paprika 🌶️
  • 1 tbsp sofrito (cilantro, culantro, garlic blend) 🌿
  • 0.5 tsp adobo seasoning
  • 0.5 tsp sazón (with annatto for color) ✨
  • 2 cups chicken broth 🍲
  • 1 small bay leaf 🌿
  • 0.5 cup pimiento-stuffed green olives (optional) 🫒
  • Salt and black pepper to taste 🧂
  • For the Yucca:
  • 2 medium yucca (cassava) roots, peeled and cut into chunks 🥘
  • 1 tbsp butter 🧈
  • 0.5 tsp salt 🧂

Instructions

  1. 1Prepare the Yucca
  2. 21️⃣ In a pot, bring water to a boil and add the yucca with a pinch of salt. Boil for about 20-25 minutes until fork-tender. Drain and toss with butter. 🥘✨
  3. 3Make the Chicken Stew
  4. 42️⃣ Sear the Chicken – In a large pot or Dutch oven, heat olive oil over medium heat. Add chicken and sear for 3-4 minutes per side until golden brown. Remove and set aside. 🍗🔥
  5. 53️⃣ Sauté the Aromatics – In the same pot, add onions, bell peppers, and garlic. Cook until softened and fragrant. Stir in tomato paste, chopped tomato, and sofrito. Cook for 2 minutes to develop the flavors. 🧄🍅
