Ingredients

  • For the Soup:
  • 2 cups dried black beans, soaked overnight 🫘
  • 6 cups water or vegetable broth 🍲
  • 2 tbsp olive oil 🫒
  • 1 small onion, diced 🧅
  • 0.5 green bell pepper, diced 🌶️
  • 0.5 red bell pepper, diced 🌶️
  • 3 cloves garlic, minced 🧄
  • 1 tbsp tomato paste 🍅
  • 1 tsp ground cumin
  • 1 tsp smoked paprika 🌶️
  • 1 tsp oregano 🌿
  • 0.5 tsp black pepper
  • 1 tsp salt (adjust to taste) 🧂
  • 0.5 cup orange juice 🍊
  • 1 tbsp apple cider vinegar 🍏
  • 2 bay leaves 🍃
  • For Serving:
  • 1 cup cooked white rice 🍚
  • 0.5 cup fresh cilantro, chopped 🌿
  • 1 lime, cut into wedges 🍋
  • Diced avocado (optional) 🥑

Instructions

  1. 11️⃣ Soak & Cook the Beans
  2. 2Drain the soaked beans and rinse. In a large pot, combine beans with water or broth. Bring to a boil, then reduce heat and simmer for 1 hour until tender. 🫘🔥
  3. 32️⃣ Sauté the Aromatics
  4. 4In a separate pan, heat olive oil over medium heat. Sauté onions, bell peppers, and garlic until fragrant. Stir in tomato paste, cumin, paprika, oregano, and black pepper. Cook for 2 minutes to develop flavors. 🧄🌿
  5. 53️⃣ Simmer the Soup
  6. 6Add the sautéed mixture to the pot of beans. Stir in salt, orange juice, apple cider vinegar, and bay leaves. Let simmer for another 30 minutes, stirring occasionally. 🍲✨

  8. 8Remove bay leaves. For a creamy texture, blend 1 cup of the soup and return it to the pot. Stir well. 🫘🔥
