Ingredients

  • For the Pernil:
  • 5 lbs pork shoulder (bone-in, skin on) 🐖
  • 6 cloves garlic, minced 🧄
  • 1 tbsp olive oil 🫒
  • 2 tbsp adobo seasoning 🧂
  • 1 tbsp oregano 🌿
  • 1 tsp cumin
  • 1 tsp smoked paprika 🌶️
  • 1 tsp black pepper
  • 2 tbsp apple cider vinegar 🍏
  • 0.5 cup orange juice 🍊
  • 0.5 cup pineapple juice 🍍
  • For the Roasted Sweet Potatoes:
  • 3 large sweet potatoes, peeled and cubed 🍠
  • 2 tbsp olive oil 🫒
  • 1 tbsp honey 🍯
  • 0.5 tsp cinnamon (optional) ✨
  • 0.5 tsp salt 🧂

Instructions

  1. 11️⃣ Marinate the Pork
  2. 2In a small bowl, mix garlic, olive oil, adobo, oregano, cumin, paprika, black pepper, apple cider vinegar, orange juice, and pineapple juice.
  3. 3Score the skin of the pork shoulder and rub the marinade all over, ensuring it gets into the cuts. Cover and marinate for at least 4 hours, preferably overnight.
  4. 42️⃣ Roast the Pernil
  5. 5Preheat oven to 325°F (163°C). Place the pork in a roasting pan, skin side up. Cover with foil and roast for 4 hours.
  6. 6Remove foil, increase heat to 425°F (218°C), and roast for another 30-45 minutes to crisp the skin. Let it rest for 15 minutes before slicing.
  7. 73️⃣ Prepare the Sweet Potatoes
  8. 8While the pernil is roasting, toss sweet potatoes with olive oil, honey, cinnamon, and salt.
  9. 9Spread on a baking sheet and roast at 400°F (204°C) for 30 minutes, flipping halfway through.
