Arroz con Gandules with Grilled Churrasco

Ingredients

  • For the Grilled Churrasco:
  • 1 ½ lbs skirt steak 🥩
  • 3 cloves garlic, minced 🧄
  • 0.25 cup olive oil 🫒
  • 2 tbsp fresh lime juice 🍋
  • 1 tbsp white vinegar
  • 1 tbsp soy sauce
  • 1 tsp oregano 🌿
  • 1 tsp cumin
  • 0.5 tsp black pepper
  • 0.5 tsp salt 🧂
  • For the Arroz con Gandules:
  • 2 cups long-grain rice 🍚
  • 1 ½ cups chicken broth 🍗
  • 1 can (15 oz) gandules (pigeon peas), drained 🌿
  • 0.25 cup tomato sauce 🍅
  • 1 tbsp olive oil 🫒
  • 0.25 cup sofrito (homemade or store-bought) 🌿
  • 1 packet sazón con achiote ✨
  • 0.5 tsp adobo seasoning 🧂
  • 0.25 tsp black pepper
  • 0.5 tsp cumin
  • 0.5 red bell pepper, diced 🌶️
  • 0.5 onion, diced 🧅
  • 2 cloves garlic, minced 🧄
  • 2 tbsp chopped fresh cilantro 🌿

Instructions

  1. 11️⃣ Marinate the Steak
  2. 2In a bowl, mix garlic, olive oil, lime juice, vinegar, soy sauce, oregano, cumin, salt, and pepper. Coat the steak with the marinade and let it rest for at least 30 minutes (or overnight for deeper flavor). 🥩🔥
  3. 32️⃣ Prepare the Arroz con Gandules
  4. 4Heat olive oil in a pot over medium heat. Add sofrito, onion, garlic, and bell pepper. Sauté until fragrant. 🌿🔥
  5. 5Stir in tomato sauce, sazón, adobo, black pepper, and cumin. Let cook for 2 minutes.
  6. 6Add rice and stir to coat. Pour in chicken broth and gandules. Bring to a boil, then reduce heat to low. Cover and simmer for 25 minutes. Fluff with a fork and stir in fresh cilantro. 🍚✨

  8. 8Heat a grill or skillet over high heat. Cook the steak for 3-4 minutes per side for medium-rare, or longer if desired. Let it rest for 5 minutes before slicing against the grain. 🥩🔥
