Ingredients

  • For the Sweet Plantains:
  • 2 ripe plantains, sliced into rounds 🍌
  • 1 tbsp butter or coconut oil 🧈
  • 1 tbsp brown sugar or honey 🍯
  • 0.25 tsp cinnamon (optional)
  • For the Black Beans:
  • 1 can black beans, drained & rinsed 🖤
  • 0.5 red onion, diced 🧅
  • 1 tsp olive oil
  • 1 tsp cumin
  • 0.5 tsp garlic powder 🧄
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • For Assembly:
  • 4 large tortillas 🌯
  • 0.5 cup crumbled queso fresco or feta 🧀 (optional)
  • 0.5 cup fresh cilantro, chopped 🌿
  • 0.5 cup sour cream or Greek yogurt 🥣
  • 1 tbsp lime juice 🍋
  • 0.5 avocado, sliced 🥑

Instructions

  1. 11️⃣ Cook the Sweet Plantains
  2. 2Heat butter in a pan over medium heat.
  3. 3Add plantain slices, sprinkle with brown sugar and cinnamon.
  4. 4Cook 3-4 minutes per side until golden and caramelized. Remove from heat.
  5. 52️⃣ Prepare the Black Beans
  6. 6In a separate pan, heat olive oil and sauté red onion until soft.
  7. 7Add black beans, cumin, garlic powder, salt, and pepper. Stir and cook for 5 minutes. Remove from heat.
  8. 83️⃣ Make the Wraps
  9. 9Warm tortillas in a dry pan or microwave.
  10. 10Spread a spoonful of sour cream on each tortilla.
  11. 11Add a layer of black beans, followed by caramelized plantains.
  12. 12Top with queso fresco, fresh cilantro, and avocado slices.
  13. 13Squeeze lime juice over the filling.

  15. 15Roll the wraps tightly and cut in half if desired.
