Sometimes,” Don Luis said with a wink, “you don’t need a feast—just a golden crunch, a creamy slice of avocado, and an egg cooked with love.” 🥰 With the sizzle of the pan and a soft salsa beat in the background, this quick breakfast became one of his most requested weekend dishes—simple, soulful, and satisfying. 💛

Ingredients

  • 2 green plantains 🍌
  • Salt (to taste) 🧂
  • 0.5 cup vegetable oil for frying 🛢️
  • 2 eggs 🍳
  • 1 ripe avocado, sliced 🥑
  • Optional: garlic salt or adobo seasoning 🧄
  • Optional garnish: cilantro or hot sauce 🌿🌶️

Instructions

  1. 1Peel and slice the plantains into 1-inch chunks. If the skin is tough, make a slit and peel it off with your fingers.
  2. 2Heat oil in a pan over medium heat. Fry plantain pieces for 3–4 minutes per side, until lightly golden.
  3. 3Remove from oil and flatten each piece gently using a tostonera or the bottom of a mug.
  4. 4Return the flattened plantains to the hot oil and fry until crispy and golden brown. Drain on paper towels and sprinkle with salt. ✨
  5. 5In a separate nonstick pan, fry the eggs sunny-side up or to your preference.
  6. 6Slice the avocado and gently fan it out or lay it over each serving of tostones.
  7. 7Top each pile with a fried egg, then season with garlic salt or hot sauce if desired. 🌶️
