Ingredients

  • For the Mofongo 🍌
  • 4 green plantains 🍌
  • 4 garlic cloves, minced 🧄
  • 0.25 cup olive oil 🫒
  • 0.5 cup pork cracklings (chicharrón) 🐖 (optional)
  • Salt to taste 🧂
  • For the Spicy Garlic Shrimp 🔥🍤
  • 1 lb large shrimp, peeled & deveined 🍤
  • 6 garlic cloves, minced 🧄
  • 1 tsp red pepper flakes 🌶️
  • 2 tbsp butter 🧈
  • 2 tbsp olive oil 🫒
  • 0.25 cup chopped cilantro 🌿
  • Juice of 1 lime 🍋
  • Salt and pepper to taste 🧂

Instructions

  1. 1Step 1: Fry the Plantains 🍳
  2. 2Peel and slice plantains into thick chunks.
  3. 3Heat oil in a skillet and fry plantains until golden (about 5–7 mins). Drain on paper towels.
  4. 4Step 2: Mash the Mofongo 🪵
  5. 5In a pilón or large bowl, mash fried plantains with garlic, olive oil, and chicharrón until smooth and moldable.
  6. 6Shape into balls or press into small bowls to form a mound. Set aside.
  7. 7Step 3: Cook the Shrimp 🔥
  8. 8In a hot skillet, add butter and olive oil. Sauté garlic and red pepper flakes for 1–2 mins.
  9. 9Add shrimp, season with salt and pepper, and cook until pink (about 3–4 mins).
  10. 10Squeeze lime juice and sprinkle with cilantro. Mix well.
