Ingredients
- For the Mofongo:
- 4 green plantains, peeled and sliced
- 6 cloves garlic, roasted
- Salt to taste
- 1 cup pork cracklings (chicharrón)
- 0.25 cup olive oil (plus more for frying)
- For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 0.25 tsp paprika (for smoky flavor)
- 4 tbsp unsalted butter
- 1 tbsp chopped parsley
- Salt & pepper to taste
- Optional: 1 tsp lemon juice for brightness
Instructions
- 1Fry the plantains: In hot oil, fry sliced green plantains until golden and soft. Remove and drain.
- 2Mash it up: In a pilón or bowl, mash plantains with roasted garlic, salt, chicharrón, and olive oil until chunky and combined. Shape into dome-like mounds.
- 3Cook the shrimp: In a pan, melt butter and sauté minced garlic until fragrant. Add shrimp, paprika, salt, pepper, and lemon juice (if using). Cook for 3–4 minutes or until shrimp turns pink.
- 4Make it spooky: Pour garlic butter over the shrimp and stir in chopped parsley.
- 5Plate with flair: Place mofongo mounds on a plate and top generously with the spooky garlic shrimp. Drizzle extra butter sauce on top.
