Instructions

  1. 1Peel and Slice Plantains: Cut each plantain into 2-inch chunks.
  2. 2First Fry: Heat vegetable oil in a pan over medium heat. Fry plantain chunks for about 3-4 minutes per side until slightly golden.
  3. 3Smash: Use a tostonera (or the bottom of a cup) to press each piece into a cup shape. You can also press into a muffin tin for perfect little bowls!
  4. 4Second Fry: Return the cups to the hot oil and fry again until crispy (2-3 more minutes). Set on paper towels and sprinkle with salt.
  5. 5Prepare Shrimp: In a skillet, heat olive oil. Add garlic and shrimp, then season with paprika, cayenne, lime juice, salt, and pepper. Cook for 3-4 minutes until shrimp are pink and juicy.
  6. 6Assemble: Place 1-2 shrimp in each tostone cup. Garnish with fresh cilantro.
  7. 7Serve Hot: Add a drizzle of lime juice and a pinch of salt right before serving. Optional: serve with a side of mayo-ketchup! 😋
