Instructions

  1. 1Prep the plantains: Peel the green plantains and cut each into 4 equal chunks. Soak in salted water for 10 minutes, then drain and pat dry.
  2. 2Fry the first round: Heat oil in a deep pan over medium heat. Add garlic clove to flavor the oil (optional). Fry plantain chunks until light golden (about 4–5 minutes). Remove and drain.
  3. 3Shape the cups: Use a tostonera or small cup to press each fried plantain chunk into a cup shape. Fry again until crispy and golden brown (another 3–4 minutes). Sprinkle with salt and let them cool slightly.
  4. 4Make the filling: In a bowl, combine crab meat, diced avocado, lime juice, cilantro, red onion, and mayo/sour cream if using. Mix gently so avocado stays chunky. Season with salt and optional spice.
  5. 5Assemble: Spoon the crab-avocado mixture generously into each toston cup. Garnish with a tiny cilantro leaf or lime zest for flair. 🍃✨
