Chillo Frito with Pineapple Salsa
Story

Ingredients
- For the Chillo Frito:
- 4 whole red snappers (cleaned and scaled) 🐠
- 1 tsp adobo seasoning 🧂
- 1 tsp garlic powder 🧄
- 0.5 tsp black pepper 🌑
- 0.5 tsp smoked paprika 🌶️
- Juice of 1 lime 🍋
- 1 cup flour (for dredging) 🌾
- Vegetable oil for frying 🛢️
- For the Pineapple Salsa:
- 2 cups diced fresh pineapple 🍍
- 0.5 cup red onion, finely chopped 🧅
- 1 small red chili or jalapeño, minced 🌶️
- Juice of 1 lime 🍋
- 2 tbsp chopped cilantro 🌿
- Pinch of salt 🧂
Instructions
- 1Prep the fish: Pat fish dry. Score both sides (3 slits each side). Rub with lime juice, then season with adobo, garlic powder, black pepper, and paprika.
- 2Dredge: Lightly coat each fish with flour. Shake off excess.
- 3Fry: Heat oil (about 1 inch deep) in a large pan over medium-high heat. Fry each fish for 4–5 minutes per side until golden and crispy. Place on paper towels to drain.
- 4Make salsa: In a bowl, combine pineapple, red onion, chili, lime juice, cilantro, and salt. Mix well and chill until serving.
- 5Serve: Place fried chillo on a platter and top with generous spoonfuls of pineapple salsa.
