Chillo Frito con Pineapple Salsa

The sizzling sound de pescado hitting the hot oil filled the air de Don Luis’s rustic kitchen. Ingredientes
- para the Chillo Frito:
- 4 whole red snappers (cleaned y scaled) 🐠
- 1 tsp adobo seasoning 🧂
- 1 tsp ajo en polvo 🧄
- 0.5 tsp pimienta negra 🌑
- 0.5 tsp paprika ahumada 🌶️
- Juice de 1 lima 🍋
- 1 cup flour (para dredging) 🌾
- Vegetable oil para frying 🛢️
- para the Pineapple Salsa:
- 2 cups picado en cubos fresco pineapple 🍍
- 0.5 cup red cebolla, finamente picado 🧅
- 1 pequeño red chili o jalapeño, minced 🌶️
- Juice de 1 lima 🍋
- 2 tbsp picado cilantro 🌿
- Pinch de sal 🧂
Instrucciones
- 1Prep the pescado: Pat pescado dry. Score both sides (3 slits each side). Rub con lima juice, then season con adobo, ajo en polvo, pimienta negra, y paprika.
- 2Dredge: Lightly coat each pescado con flour. Shake off excess.
- 3Fry: calienta oil (about 1 inch deep) in a grande pan over mediano-high calienta. Fry each pescado para 4–5 minutes per side until golden y crispy. Place on paper towels to drain.
- 4Make salsa: In a bowl, combine pineapple, red cebolla, chili, lima juice, cilantro, y sal. Mix well y chill until serving.
- 5sirve: Place fried chillo on a platter y top con generous spoonfuls de pineapple salsa.
