Ingredients
- 1 lb Puerto Rican longaniza sausage, sliced into ½” rounds 🔥
- 2 tbsp vegetable oil 🧴
- 0.5 cup sofrito (preferably homemade!) 🧅🌿🌶️
- 1 packet of Sazón con achiote 🌅
- 1 tsp adobo seasoning 🧂
- 0.5 tsp ground black pepper ⚫
- 1½ cups long-grain white rice 🍚
- 3 cups water 💧
- 0.5 cup tomato sauce 🍅
- 0.5 cup green peas (optional) 🌱
- Salt to taste 🧂
Instructions
- 1Heat the oil in a caldero or large pot over medium heat. Add the longaniza and sauté until browned and fragrant, about 6–8 minutes. Remove a few pieces to garnish later if desired.
- 2Add sofrito and sauté with the sausage for 2 minutes.
- 3Stir in tomato sauce, Sazón, adobo, and black pepper. Let it simmer for 2 more minutes.
- 4Add the rice and stir well, coating each grain in flavor. Toast lightly for 2 minutes.
- 5Pour in the water and green peas (if using). Stir once and bring to a boil.
- 6Reduce heat to low, cover, and simmer for 25–30 minutes, or until rice is fully cooked.
- 7Fluff with a fork, taste for salt, and garnish with reserved longaniza pieces. Serve warm! 🍽️🔥
