Pastelón Wraps with Sweet Plantains and Queso Blanco
Story
In the heart of the kitchen, Don Luis stood with a ripe plantain in one hand and a cheeky grin on his face. “We used to fight over the corners of abuela’s pastelón,” he chuckled, “but now I make them portable… and nobody fights anymore!” 😄 With his signature jean-and-leather apron tied tight, Don Luis turned the classic Puerto Rican pastelón into a hand-held wrap—perfect for lunchboxes, picnics, or those days when you just want to eat with one hand and dance with the other! 💃🏽🎶 Inspired by the sweet-savory balance of the original dish, these wraps layer soft maduros (sweet plantains), juicy ground beef, gooey melted cheese, and a hit of sazón all tucked inside a warm tortilla. They’re fast, fun, and every bite sings with sabor! 🎵🌯✨ Time, Calories & Cost
Ingredients
- 2 ripe plantains 🍌 (sliced lengthwise)
- 1 lb ground beef 🥩
- 2 cloves garlic, minced 🧄
- 0.5 small onion, finely chopped 🧅
- 1 packet sazón (or 1 tsp) 🌶️
- 1 tsp adobo seasoning 🧂
- 4 flour tortillas 🌯
- 1 cup shredded mozzarella or queso blanco 🧀
- 1 tbsp tomato paste 🍅
- 1 tbsp olive oil 🫒
- Optional: chopped cilantro for garnish 🌿
Instructions
- 1Prep the Plantains: Heat olive oil in a non-stick skillet over medium heat. Pan-fry the sliced plantains until golden and tender, about 2–3 mins per side. Set aside on paper towels to drain.
- 2Cook the Beef: In the same skillet, sauté onion and garlic until fragrant. Add ground beef, sazón, adobo, and tomato paste. Cook until browned and saucy.
- 3Assemble the Wraps: Lay out the tortillas. Layer 2–3 slices of sweet plantain, a scoop of beef, and a handful of cheese.
- 4Wrap It Up: Fold in the sides and roll tightly like a burrito. Toast on a dry skillet seam-side down until crispy and warm, about 2–3 mins per side.
- 5Serve: Slice in half, garnish with cilantro if desired, and enjoy warm! 🌯💥
