Sancocho (Puerto Rican Beef Stew)

Don Luis rolled up his sleeves, tightened the straps on his jean-and-leather apron (you know, the one with his name embroidered just right), and pulled out the biggest pot he owned. He remembered how his mamá would throw in everything she had—yuca, green bananas, corn, beef shank—all into a bubbling cauldron of flavor. Ingredients

  • 2 lbs beef shank or stew meat (bone-in adds flavor!)
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 ears of corn, cut into chunks
  • 2 russet potatoes, peeled & chopped
  • 2 green bananas, peeled & chopped
  • 2 carrots, sliced
  • 1 cup yuca (cassava), peeled & chopped
  • 0.25 cup chopped cilantro
  • 2 tbsp olive oil
  • 0.25 cup tomato sauce
  • 1 tbsp adobo seasoning
  • 1 tsp oregano
  • Salt & pepper to taste
  • 8 cups water

Instructions

  1. 1In a large pot, heat olive oil over medium heat. Add beef shank pieces and brown for 5–7 min.
  2. 2Add onion, bell pepper, garlic, and sauté until softened.
  3. 3Stir in tomato sauce, adobo, oregano, and a pinch of salt and pepper. Let it all sizzle for 2 min.
  4. 4Pour in water and bring to a boil. Reduce heat to low and simmer for 1 hour until beef is tender.
  5. 5Add yuca, carrots, potatoes, corn, and green bananas. Simmer for another 45 min or until all veggies are tender.
  6. 6Taste and adjust seasoning. Stir in fresh cilantro just before serving.
