Sancocho (puertorriqueño Carne Stew)
Historia
The skies had turned gray, y the winds whispered through the palm trees like an old salsa tune. That could only mean one thing: Sancocho weather! Don Luis rolled up his sleeves, tightened the straps on his jean-y-leather apron (you know, the one con his name embroidered just right), y pulled out the biggest pot he owned. He remembered how his mamá would throw in everything she had—yuca, green guineos, corn, carne shank—all into a bubbling cauldron de flavor. Now, it was his turn to pass down the magic, one simmering spoonful at a time. “You don’t make a pequeño pot de Sancocho,” he’d say con a wink. “You make enough to feed your soul… y your neighbors too!” 🫶🏽🍛 Time & Nutrition
Ingredientes
- 2 lbs carne shank o stew meat (bone-in adds flavor!)
- 1 grande cebolla, picado
- 1 green bell pepper, picado
- 4 cloves ajo, minced
- 2 ears de corn, cut into chunks
- 2 russet papas, peeled & picado
- 2 green guineos, peeled & picado
- 2 carrots, sliced
- 1 cup yuca (cassava), peeled & picado
- 0.25 cup picado cilantro
- 2 tbsp aceite de oliva
- 0.25 cup tomate sauce
- 1 tbsp adobo seasoning
- 1 tsp oregano
- sal & pepper to taste
- 8 cups water
Instrucciones
- 1In a grande pot, calienta aceite de oliva over fuego medio. Add carne shank pieces y brown para 5–7 min.
- 2Add cebolla, bell pepper, ajo, y saltea until softened.
- 3Stir in tomate sauce, adobo, oregano, y a pinch de sal y pepper. Let it all sizzle para 2 min.
- 4Pour in water y bring to a boil. Reduce calienta to low y simmer para 1 hour until carne is tender.
- 5Add yuca, carrots, papas, corn, y green guineos. Simmer para another 45 min o until all veggies are tender.
- 6Taste y adjust seasoning. Stir in fresco cilantro just before serving.
