Peruvian Seco de Res (Beef Stew with Cilantro)

He reached for his favorite pot, the one seasoned by time and tradition, and began building the stew layer by layer. The beef would simmer until it was melt-in-your-mouth tender, and the cilantro sauce? Oh, it would dance on the tongue like a Peruvian folk song. Ingredients

  • 2 lbs beef chuck, cut into chunks
  • Salt & black pepper (to taste)
  • 2 tbsp vegetable oil
  • 1 large red onion, finely chopped
  • 4 garlic cloves, minced
  • 1 aji amarillo (or substitute with 1 tsp yellow chili paste)
  • 1 bunch fresh cilantro
  • 0.5 cup beef broth or water
  • 0.5 cup dark beer (or substitute with more broth)
  • 2 medium potatoes, cut into chunks
  • 1 large carrot, sliced
  • Optional: 1 tbsp cumin
  • Optional: 1 tbsp vinegar or lime juice for brightness

Instructions

  1. 1Season & Brown the Beef 🥩🔥
  2. 2Season beef with salt and pepper. In a large pot, heat oil over medium-high and brown the beef in batches. Set aside.
  3. 3Build the Base 🍳🧅
  4. 4In the same pot, sauté the onion until soft (about 5–7 min), then add garlic and aji amarillo. Cook for 2 more minutes.
  5. 5Make the Cilantro Sauce 🌿💚
  6. 6Blend cilantro with the broth (or water) until smooth. Pour into the pot and stir well.
  7. 7Simmer Gently 🍺🕰️
  8. 8Return beef to the pot. Add dark beer and cumin (if using). Simmer covered on low for 1 hour.
  9. 9Add Veggies 🥔🥕
  10. 10Add potatoes and carrots. Simmer uncovered for another 30–45 minutes, until the meat is tender and the sauce thickens.
  11. 11Brighten & Serve 🍋🍚
