Peruvian Seco de Res (carne Stew con Cilantro)

Ingredientes

  • 2 lbs carne chuck, cut into chunks
  • sal & pimienta negra (to taste)
  • 2 tbsp vegetable oil
  • 1 grande red cebolla, finamente picado
  • 4 ajo cloves, minced
  • 1 aji amarillo (o substitute con 1 tsp yellow chili paste)
  • 1 bunch fresco cilantro
  • 0.5 cup carne broth o water
  • 0.5 cup dark beer (o substitute con more broth)
  • 2 mediano papas, cut into chunks
  • 1 grande carrot, sliced
  • opcional: 1 tbsp cumin
  • opcional: 1 tbsp vinegar o lima juice para brightness

Instrucciones

  1. 1Season & Brown the carne 🥩🔥
  2. 2Season carne con sal y pepper. In a grande pot, calienta oil over mediano-high y brown the carne in batches. reserva.
  3. 3Build the Base 🍳🧅
  4. 4In the same pot, saltea the cebolla until soft (about 5–7 min), then add ajo y aji amarillo. cocina para 2 more minutes.
  5. 5Make the cilantro Sauce 🌿💚
  6. 6Blend cilantro con the broth (o water) until smooth. Pour into the pot y stir well.
  7. 7Simmer Gently 🍺🕰️
  8. 8Return carne to the pot. Add dark beer y cumin (if using). Simmer covered on low para 1 hour.
  9. 9Add Veggies 🥔🥕
  10. 10Add papas y carrots. Simmer uncovered para another 30–45 minutes, until the meat is tender y the sauce thickens.
  11. 11Brighten & sirve 🍋🍚
  12. 12Add vinegar o lima juice to finish. sirve con fluffy white rice o Peruvian-style rice. ¡Buen provecho!
