Pollo Guisado with Stewed Beans
Story

Ingredients
- For the Pollo Guisado:
- 2 lbs bone-in, skinless chicken thighs 🍗
- 1 tbsp olive oil 🫒
- 0.5 onion, chopped 🧅
- 0.5 bell pepper, chopped 🌶️
- 3 cloves garlic, minced 🧄
- 1 tsp salt 🧂
- 0.5 tsp black pepper
- 1 tsp oregano 🌿
- 0.5 tsp cumin
- 1 tsp smoked paprika
- 0.5 tsp sazón seasoning ✨
- 0.5 cup tomato sauce 🍅
- 1 tbsp tomato paste 🍅
- 1 cup chicken broth 🍗
- 0.5 cup water 💧
- 1 tbsp Worcestershire sauce
- 0.5 cup pitted green olives 🫒
- 2 tbsp fresh cilantro, chopped 🌿
- 2 bay leaves 🍃
- For the Stewed Beans:
- 1 can (15 oz) red kidney beans, drained and rinsed 🫘
- 1 tbsp olive oil 🫒
- 0.5 onion, chopped 🧅
- 2 cloves garlic, minced 🧄
- 0.5 bell pepper, chopped 🌶️
- 0.5 tsp salt 🧂
- 0.5 tsp black pepper
- 0.5 tsp oregano 🌿
- 0.5 tsp cumin
- 0.5 tsp smoked paprika
- 0.5 cup tomato sauce 🍅
- 0.5 cup water 💧
Instructions
- 11️⃣ Cook the Pollo Guisado:
- 2Heat olive oil in a large pot over medium heat. Add onions, bell peppers, and garlic. Sauté until fragrant.
- 3Add chicken thighs, searing on each side until golden brown. Season with salt, pepper, oregano, cumin, smoked paprika, and sazón.
- 4Stir in tomato sauce, tomato paste, chicken broth, water, Worcestershire sauce, olives, and bay leaves.
- 5Cover and simmer on low heat for 45-50 minutes until the chicken is tender and the sauce thickens. Stir occasionally.

- 7In a saucepan, heat olive oil over medium heat. Add onions, garlic, and bell peppers, sautéing until soft.
- 8Stir in the beans, tomato sauce, water, salt, pepper, oregano, cumin, and smoked paprika.
- 9Simmer for 15-20 minutes, stirring occasionally, until the beans thicken.
