Ingredients
- For the Pollo en Fricase:
- 2 lbs bone-in, skinless chicken thighs 🍗

- 3 cloves garlic, minced 🧄
- 1 cup crushed tomatoes 🍅
- 0.5 cup tomato sauce 🍅
- 0.5 cup chicken broth 🍲
- 0.5 cup dry white wine (or more broth) 🍷
- 1 tbsp tomato paste 🍅
- 0.5 tsp cumin
- 0.5 tsp smoked paprika 🌶️
- 0.5 tsp oregano 🌿
- 0.5 tsp black pepper
- 0.5 tsp salt 🧂
- 0.5 cup pitted green olives 🫒
- 1 tbsp capers (optional) ✨
- 2 medium potatoes, cubed 🥔
- 2 tbsp fresh cilantro, chopped 🌿
- For the Yucca:
- 2 lbs yucca, peeled and cut into chunks 🥔
- 1 tbsp butter 🧈
- 1 clove garlic, minced 🧄
- 0.5 tsp salt 🧂
- 1 tbsp olive oil 🫒
Instructions
- 11️⃣ Sear the Chicken
- 2Heat olive oil in a large pot over medium heat. Sear chicken on both sides until golden brown (about 3-4 minutes per side). Remove and set aside.
