Pollo Guisado with Rice and Beans
Story

Ingredients
- For the Pollo Guisado:
- 1 ½ lbs bone-in chicken thighs, skin removed 🍗
- 2 tbsp olive oil 🫒
- 0.5 onion, diced 🧅
- 0.5 green bell pepper, diced 🌶️
- 0.5 red bell pepper, diced 🌶️
- 3 cloves garlic, minced 🧄
- 1 tbsp tomato paste 🍅
- 1 cup tomato sauce 🍅
- 0.5 cup chicken broth 🍗
- 1 tsp cumin
- 0.5 tsp smoked paprika
- 0.5 tsp oregano 🌿
- 0.5 tsp black pepper
- 0.5 tsp salt 🧂
- 1 tbsp Worcestershire sauce
- 0.5 cup green olives, sliced 🫒
- 1 bay leaf 🍃
- 2 tbsp fresh cilantro, chopped 🌿
- For the Rice and Beans:
- 1 cup white rice 🍚
- 2 cups water 💧
- 1 tbsp olive oil 🫒
- 1 can (15 oz) red beans, drained and rinsed 🫘
- 0.5 tsp cumin
- 0.5 tsp garlic powder 🧄
- 0.5 tsp salt 🧂
- 0.5 tsp black pepper
Instructions
- 11️⃣ Brown the Chicken
- 2Heat olive oil in a large pot over medium heat. Sear chicken thighs on both sides until golden brown (about 4-5 minutes per side). Remove and set aside.
- 32️⃣ Sauté the Aromatics
- 4In the same pot, add onions, bell peppers, and garlic. Sauté until soft and fragrant.
- 53️⃣ Build the Stew
- 6Stir in tomato paste, tomato sauce, chicken broth, cumin, smoked paprika, oregano, black pepper, salt, and Worcestershire sauce. Mix well.
- 74️⃣ Simmer to Perfection
- 8Return chicken to the pot, add olives and bay leaf, cover, and let simmer for 30-35 minutes until tender. Remove bay leaf before serving.

- 10In a separate pot, bring water to a boil, add rice, cover, and simmer for 15 minutes.
- 11In a pan, heat olive oil, then sauté beans with cumin, garlic powder, salt, and black pepper for 5 minutes.
