Don Luis still remembers the first time he tasted passion fruit. He was a young boy visiting his grandmother in the mountains of Puerto Rico. She handed him a chilled glass of jugo de parcha (passion fruit juice) and said, “Este juguito cura cualquier tristeza.” Ever since then, that bright, tangy flavor has reminded him of love and sunshine. Now, in his rustic kitchen, Don Luis blends fresh pineapple with passion fruit, adds a splash of orange, and throws in a touch of sweetness. He calls it his “Sunshine in a Cup” smoothie — the perfect start to any day, especially when Luna and Toby are curled up at his feet and the morning light pours in through the window. 🌞🐶 Time, Nutrition & Cost

Ingredients

  • 1 cup fresh pineapple chunks (or frozen)
  • 0.5 cup passion fruit pulp (strained if needed)
  • 0.5 cup orange juice (fresh or store-bought)
  • 0.5 ripe banana (for creaminess)
  • 0.5 cup ice cubes
  • 1 tbsp honey or agave syrup (optional, to taste)
  • Splash of water or coconut water, if blending needs it

Instructions

  1. 1Add pineapple, passion fruit pulp, orange juice, banana, and ice cubes to a blender.
  2. 2Blend until smooth and creamy. If it’s too thick, add a splash of water or coconut water.
  3. 3Taste and add honey or agave if you like it sweeter.
  4. 4Pour into chilled glasses, garnish with a slice of pineapple or a paper umbrella if you’re feeling fancy! 🏖️
