Ingredients

  • 4 eggs 🥚
  • 2 tbsp sofrito (homemade or store-bought) 🟢
  • 1 ripe plantain (yellow with black spots) 🍌
  • 1 tbsp olive oil 🫒
  • 1 tbsp butter (preferably Kerrygold) 🧈
  • Salt and pepper to taste 🧂
  • Optional: 1 tbsp milk for fluffier eggs 🥛

Instructions

  1. 1Peel & Slice the Plantain 🍌
  2. 2Cut off the ends, make a slit along the peel, and remove it. Slice the plantain into diagonal pieces about ½ inch thick.
  3. 3Fry the Plantains 🔥
  4. 4In a non-stick pan, heat the olive oil over medium heat. Add the plantain slices and cook for about 3–4 minutes per side until golden and caramelized. Remove and set aside on a paper towel.
  5. 5Whisk the Eggs 🥄
  6. 6Crack the eggs into a bowl, add salt, pepper, and milk (if using), and whisk until smooth and a bit frothy.

  8. 8In the same pan, reduce the heat slightly. Add the butter and let it melt. Stir in the sofrito and let it sizzle for 30 seconds to awaken the flavors.

  10. 10Pour in the egg mixture and gently stir with a spatula. Move the eggs around slowly, scraping the bottom and folding over. Cook until just set—don’t overcook them!
