Season 11 - Breakfast / S11B21
Guava and Cheese Croque Madame
Story
There’s something magical about Sunday mornings at Don Luis’s house. The sunlight filters through the tall kitchen windows, salsa music plays softly on the radio, and the scent of toasted bread fills the air. One day, his granddaughter peeked into the kitchen asking, “Abuelo, can we make something *fancy* but fun?” With a wink and a flip of his spatula, Don Luis pulled out guava paste, queso blanco, and farm eggs. He layered the flavors of the Caribbean with a touch of French flair. A crispy Croque Madame, but with guava and cheese? ¡Claro que sí! Sweet meets savory in this golden brunch beauty—melty, gooey, and crowned with a perfectly cooked egg. The result? A masterpiece that had everyone dancing in their chairs before the first bite.
Ingredients
- 4 slices of brioche or thick white bread 🍞
- 4 slices of queso blanco or Swiss cheese 🧀
- 4 tbsp guava paste, sliced or spreadable 🍬
- 2 eggs 🥚
- 1 tbsp butter 🧈
- 1 tsp olive oil (for frying the eggs) 🫒
- Optional: pinch of sea salt and cracked black pepper 🧂
Instructions
- 1Prep the bread: Lay out two slices of bread. Spread a layer of guava paste and top with cheese slices. Cover with the second slice to form a sandwich.
- 2Toast it golden: Melt butter in a skillet over medium heat. Add the sandwiches and press gently with a spatula. Cook until golden brown and cheese is melted (about 3-4 minutes per side).
- 3Fry the eggs: In another pan, heat olive oil and fry two eggs sunny side up. Add a pinch of salt and pepper.
- 4Assemble the Croque Madame: Plate each sandwich and gently top with a fried egg.
- 5Serve hot: Let that yolk run and that guava melt—brunch is served! 🍽️
