Ingredients
- For the Fricase de Pollo:
- 4 chicken thighs, bone-in, skin-on
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1 bay leaf
- 0.5 cup tomato sauce
- 0.5 cup dry white wine (or chicken broth for kids)
- 0.25 cup green olives (pitted)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 tsp dried oregano
- Optional: 1/4 tsp smoked paprika
- For the Roasted Vegetables:
- 2 carrots, peeled and chopped
- 1 red bell pepper, sliced
- 2 small potatoes, cubed
- 2 tbsp olive oil
- Salt and pepper, to taste
- Pinch of thyme or rosemary
Instructions
- 1Sear the Chicken:
- 2In a large pot, heat olive oil over medium heat. Season the chicken with salt, pepper, and oregano. Sear on both sides until golden brown. Remove and set aside. 🔥

- 4In the same pot, add onions and cook until soft (about 5 min). Stir in garlic and cook 1 more minute. Add tomato sauce, bay leaf, paprika (if using), and wine or broth. Bring to a simmer. 🍷🍅🧄
