Pollo en Fricase with Rice and Green Beans

Ingredients

  • For the Fricase de Pollo:
  • 1½ lbs bone-in chicken thighs or drumsticks 🍗
  • 1 tbsp olive oil 🫒
  • 1 small onion, diced 🧅
  • 0.5 bell pepper, diced 🫑
  • 2 garlic cloves, minced 🧄
  • 1 tsp dried oregano 🌿
  • 1 tsp ground cumin
  • 0.5 tsp paprika
  • 1 cup tomato sauce 🍅
  • 1 cup chicken broth 🐔
  • 0.25 cup dry cooking wine (or chicken broth if preferred) 🍷
  • 0.5 cup green olives (pitted) 🫒
  • 1 small potato, peeled and diced 🥔
  • 1 bay leaf 🍃
  • Salt and pepper to taste 🧂
  • For the Rice:
  • 1 cup long grain white rice 🍚
  • 2 cups water 💧
  • 1 tsp olive oil 🫒
  • Pinch of salt 🧂
  • For the Green Beans:
  • 2 cups fresh green beans, trimmed 🥬
  • 1 tbsp olive oil 🫒
  • 1 garlic clove, thinly sliced 🧄
  • Salt to taste 🧂

Instructions

  1. 1Marinate the Chicken
  2. 2Season chicken with salt, pepper, oregano, cumin, and paprika. Let it sit for 10 minutes while you prep other ingredients 🔪.
  3. 3Sear the Chicken
  4. 4In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the chicken on all sides. Remove and set aside 🔥.
  5. 5Build the Sofrito
  6. 6In the same pot, sauté onion, bell pepper, and garlic until soft. Add tomato sauce, stir, and cook for 2-3 minutes 🥄.
  7. 7Simmer the Fricase
  8. 8Return chicken to the pot. Add broth, wine, olives, potatoes, and bay leaf. Bring to a boil, then reduce heat and simmer covered for 35–40 minutes, or until chicken is tender and sauce is thickened 🍲.

  10. 10In a saucepan, bring water, salt, and oil to a boil. Add rice, lower heat, cover, and simmer until water is absorbed (about 18 minutes). Fluff with a fork 🍚.

  12. 12Heat oil in a pan, add garlic slices, then toss in green beans. Cook 4–5 minutes until crisp-tender and bright green 🥬. Season with a pinch of salt.
