Pollo en Fricase con Rice y Green Beans

Ingredientes

  • para the Fricase de Pollo:
  • 1½ lbs bone-in pollo thighs o drumsticks 🍗
  • 1 tbsp aceite de oliva 🫒
  • 1 pequeño cebolla, picado en cubos 🧅
  • 0.5 bell pepper, picado en cubos 🫑
  • 2 ajo cloves, minced 🧄
  • 1 tsp dried oregano 🌿
  • 1 tsp ground cumin
  • 0.5 tsp paprika
  • 1 cup tomate sauce 🍅
  • 1 cup pollo broth 🐔
  • 0.25 cup dry cooking wine (o pollo broth if preferred) 🍷
  • 0.5 cup green olives (pitted) 🫒
  • 1 pequeño papa, peeled y picado en cubos 🥔
  • 1 bay leaf 🍃
  • sal y pepper to taste 🧂
  • para the Rice:
  • 1 cup long grain white rice 🍚
  • 2 cups water 💧
  • 1 tsp aceite de oliva 🫒
  • Pinch de sal 🧂
  • para the Green Beans:
  • 2 cups fresco green beans, trimmed 🥬
  • 1 tbsp aceite de oliva 🫒
  • 1 ajo clove, thinly sliced 🧄
  • sal to taste 🧂

Instrucciones

  1. 1Marinate the pollo
  2. 2Season pollo con sal, pepper, oregano, cumin, y paprika. Let it sit para 10 minutes while you prep other ingredients 🔪.
  3. 3Sear the pollo
  4. 4In a grande pot o Dutch oven, calienta aceite de oliva over mediano-high calienta. Brown the pollo on all sides. Remove y reserva 🔥.

  6. 6In the same pot, saltea cebolla, bell pepper, y ajo until soft. Add tomate sauce, stir, y cocina para 2-3 minutes 🥄.

  10. 10In a saucepan, bring water, sal, y oil to a boil. Add rice, lower calienta, cover, y simmer until water is absorbed (about 18 minutes). Fluff con a fork 🍚.
  11. 11saltea the Green Beans
  12. 12calienta oil in a pan, add ajo slices, then toss in green beans. cocina 4–5 minutes until crisp-tender y bright green 🥬. Season con a pinch de sal.
  13. 13sirve con Love
  14. 14Plate a scoop de rice, ladle generous pollo y sauce over the top, y finish con a side de sizzling green beans ❤️.
