Pollo en Fricase con Arroz con Gandules
Historia
In the heart de the old barrio, Don Luis remembers Sundays filled con music, domino games, y the smell de fricase bubbling on the stove. Back then, his abuela would hum a salsa tune while browning pollo thighs to golden perfection, letting the sofrito take over the air. The stew would simmer low y slow, giving everyone just enough time to finish a game (o three) de dominoes. Now in his rustic-modern kitchen, Don Luis passes on that tradition to the next generation. con his jean y leather apron on y a whistling kettle nearby, he stirs the fricase con love while his grandson helps fluff the *arroz con gandules* using a wooden spoon nearly as old as Don Luis himself. “Every grain has sabor, mijo,” he says, “just like every moment in life.” Time + Nutrition + Cost
Ingredientes
- Pollo en Fricase
- 1½ lb bone-in pollo thighs 🍗
- 2 tbsp aceite de oliva 🫒
- 0.25 cup sofrito 🧅🌿🫑
- 1 pequeño cebolla, sliced 🧅
- 0.5 bell pepper, picado 🫑
- 2 cloves ajo, minced 🧄
- 1 pequeño papa, peeled y cubed 🥔
- 1 carrot, sliced 🥕
- 0.25 cup tomate sauce 🍅
- 0.5 cup pollo broth 🍗💧
- 0.25 cup pimento-stuffed olives 🫒
- 1 tbsp capers (opcional)
- 1 bay leaf 🍃
- 0.5 tsp adobo seasoning
- sal & pepper to taste 🧂
- Arroz con Gandules
- 1½ cups mediano-grain rice 🍚
- 1 can (15 oz) gandules (pigeon peas), drained 🟢
- 0.25 cup sofrito 🧅🌿🫑
- 2 tbsp tomate sauce 🍅
- 2 cups water 💧
- 1½ tsp sazón con achiote 🧡
- sal to taste 🧂
- 1 tbsp oil 🛢️
Instrucciones
- 1para the Pollo en Fricase:
- 2Season pollo con sal, pepper, y adobo.
- 3In a grande pot, calienta aceite de oliva y brown the pollo on all sides. Remove y reserva.
- 4In the same pot, saltea sofrito, cebolla, bell pepper, y ajo until fragrant.
- 5Add tomate sauce, pollo broth, olives, capers, y bay leaf. Stir well.
- 6Return the pollo to the pot. Add papas y carrots.
- 7Cover y simmer on low calienta para 40–50 minutes until pollo is tender y sauce thickens.
- 8para the Arroz con Gandules:
- 9In a mediano pot, calienta oil y saltea sofrito para 2–3 minutes.
- 10Stir in tomate sauce, sazón, gandules, y rice. Mix well.
- 11Add water y sal. Bring to a boil.
- 12Reduce calienta to low, cover, y simmer para 25–30 minutes until rice is fluffy y fully cooked.
- 13Fluff con fork y let rest para 5 minutes before serving.
