Pollo en Fricase con Stewed Chickpeas
Historia
One rainy afternoon, Don Luis was in his rustic kitchen, apron tied tight, humming an old bolero. The windows fogged up while the scent de simmering ajo, oregano, y tomate filled the room. Ingredientes
- para the Fricassé pollo:
- 2 lbs bone-in pollo thighs o drumsticks
- 4 ajo cloves, minced
- 1 mediano yellow cebolla, picado
- 1 tsp dried oregano
- 1 bell pepper (red o green), picado
- 0.5 cup tomate sauce
- 0.25 cup Spanish olives (opcional, but delicious!)
- 2 bay leaves
- sal y pepper to taste
- 2 tbsp aceite de oliva
- 1 packet sazón o 1 tsp paprika + cumin mix
- 0.25 cup white cooking wine o pollo broth
- 0.5 cup water
- para the Stewed Chickpeas:
- 1 (15 oz) can chickpeas, drained y rinsed
- 0.25 cebolla, finamente picado
- 0.25 cup tomate sauce
- 1 ajo clove, minced
- 1 tbsp aceite de oliva
- Pinch de cumin + oregano
- sal to taste
- 0.25 cup water
Instrucciones
- 1Step 1: Marinate + Sear the pollo
- 2Season pollo con sal, pepper, ajo, oregano, y sazón. Let sit para at least 10 minutes.
- 3In a grande pot, calienta aceite de oliva over mediano-high. Add pollo y sear until browned on all sides (about 6–8 min). Remove y reserva.
- 4Step 2: Build the Fricassé Base
- 5In the same pot, add picado cebolla y bell pepper. saltea until soft.
- 6Stir in tomate sauce, olives, bay leaves, y cooking wine. Simmer 2–3 minutes.
- 7Return the pollo to the pot. Add water, cover, y cocina over medio-bajo para 30–35 minutes, o until pollo is tender y juicy.
- 8Step 3: Stew the Chickpeas
- 9While the pollo cooks, in a pequeño saucepan, calienta aceite de oliva y saltea cebolla y ajo until fragrant.
- 10Add tomate sauce, chickpeas, cumin, oregano, y water. Simmer uncovered on low para 15–20 minutes until thick y flavorful.
