Ingredients
- For the Carne Guisada:
- 5 lbs beef stew meat (chuck or round), cut into cubes
- 2 tbsp olive oil 🫒
- 1 small onion, diced 🧅
- 1 green bell pepper, chopped 🫑
- 3 garlic cloves, minced 🧄
- 2 tbsp sofrito
- 1 tsp adobo seasoning
- 0.5 tsp ground cumin
- 0.5 tsp black pepper
- 1 packet of sazón with achiote
- 0.25 cup tomato sauce 🍅
- 2 cups beef broth or water
- 1 bay leaf 🌿
- Optional: 1 small potato, peeled & cubed 🥔
- For the White Rice:
- 2 cups long-grain white rice
- 5 cups water
- 1 tbsp vegetable oil
- 0.5 tsp salt 🧂
- For the Black Beans:
- 1 can (15 oz) black beans, rinsed
- 1 tbsp olive oil
- 1 garlic clove, minced
- 0.25 cup diced onion
- 0.25 tsp oregano
- Salt to taste
Instructions
- 1Make the Carne Guisada
- 2In a large pot, heat olive oil over medium-high heat. Add beef cubes and brown on all sides.
- 3Add onion, bell pepper, garlic, and sofrito. Sauté for 2–3 minutes until fragrant.
- 4Stir in adobo, cumin, black pepper, sazón, and tomato sauce. Cook for 5 minutes.
- 5Pour in beef broth or water and add bay leaf (and potatoes if using).
- 6Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours until beef is tender and sauce is thickened.
- 7Cook the Rice
- 8Rinse the rice under cold water.
- 9In a pot, bring 2.5 cups water, oil, and salt to a boil.
- 10Add rice, stir once, and reduce heat to low. Cover and cook for 18–20 minutes or until fluffy.
- 11Prepare the Beans
- 12In a small saucepan, heat olive oil and sauté garlic and onion.
- 13Add black beans, oregano, and a pinch of salt. Simmer for 10–15 minutes, stirring occasionally.
