Tostones with Cilantro Avocado Sauce

When Don Luis was a niño travieso running barefoot through the fields of Puerto Rico, he remembers the *pop-pop-pop* of green plantains hitting the hot oil while his abuela hummed old tunes in the background 🎶. Every time she made tostones, she served them with a creamy dip she called her “salsita mágica” – a blend of garden herbs and whatever ripe avocado she could find 🌿🥑. Now, many years later, Don Luis has put on his signature jean-and-leather apron, ready to bring that memory to life – but this time, with a bold cilantro avocado twist. “Simple, crispy, and creamy – like a beach day in your mouth,” he chuckles, flipping the golden rounds with love 💛🌊.

Ingredients

  • For the Tostones:
  • 2 green plantains 🍌
  • 1 cup vegetable oil (for frying) 🛢
  • Salt to taste 🧂
  • For the Cilantro Avocado Sauce:
  • 1 ripe avocado 🥑
  • 0.5 cup fresh cilantro leaves 🌿
  • 1 garlic clove 🧄
  • Juice of 1 lime 🍋
  • 2 tbsp olive oil 🫒
  • Salt to taste 🧂
  • 1–2 tbsp water (to thin if needed) 💧

Instructions

  1. 1Peel and slice the plantains into 1-inch chunks.
  2. 2Heat oil in a skillet over medium heat. Once hot, fry the plantain pieces until lightly golden, about 3 minutes per side. Remove and set aside.
  3. 3Flatten each piece using the bottom of a cup or tostonera, then return to the hot oil and fry again until crispy and golden brown! 🍽✨
  4. 4Drain on paper towels and sprinkle with salt 🧂.
  5. 5To make the sauce, blend avocado, cilantro, garlic, lime juice, olive oil, and salt. Add water to thin to your desired consistency.
  6. 6Serve tostones warm with a generous scoop of that dreamy green sauce 💚.
