Pastelillos de Pollo with Green Salad
Story
The smell of sizzling sofrito always made the kids run into the kitchen like it was a holiday morning. Don Luis stood proudly in his rustic kitchen, wearing his signature jean and leather apron, flattening little discs of dough like they were golden coins. Today,” he smiled, “we fold memories into pastelillos.” He’d fill them with savory pollo guisado—shredded chicken cooked with spices and love—then fry each pocket until golden and crispy. Instructions
- 1Prepare the Chicken Filling
- 2In a pan, heat a bit of oil and sauté onion, bell pepper, and sofrito until fragrant.
- 3Add tomato sauce, Sazón, and shredded chicken. Stir until well coated and heated through. Season to taste. Let cool.
- 4Assemble the Pastelillos
- 5Place 1–2 tbsp of the filling in the center of each dough disc.
- 6Fold over and press edges with a fork to seal.
- 7Fry
- 8Heat oil in a pan over medium heat. Fry pastelillos in batches until golden brown on both sides.
- 9Drain on paper towels.
- 10Make the Salad
- 11In a large bowl, combine greens, cucumber, red onion, and mango.
- 12Whisk olive oil, vinegar, honey, salt, and pepper in a small bowl. Drizzle over salad and toss.
- 13Serve
