Pollo en Fricase with Stewed Plantains
Story

Ingredients

- 2 lbs bone-in chicken thighs or drumsticks
- 2 tbsp olive oil
- 1 small onion, diced 🧅
- 1 bell pepper, diced (any color) 🌶️
- 4 garlic cloves, minced 🧄
- 0.5 cup tomato sauce 🍅
- 0.25 cup white cooking wine 🍷
- 1 tbsp capers
- 0.25 cup green olives with pimentos 🫒
- 1 tsp ground cumin
- 1 bay leaf 🍃
- 1 cup chicken broth
- Salt and pepper to taste 🧂
- Fresh cilantro for garnish 🌿
- For the Stewed Plantains 🍌
- 2 ripe plantains (yellow with black spots)
- 1 tbsp butter 🧈
- 1 tbsp brown sugar
- 0.25 tsp cinnamon
- Pinch of salt
- 0.25 cup water
Instructions
- 1Pollo en Fricase:
- 2Season chicken with salt, pepper, and cumin.
- 3In a large pot, heat olive oil over medium heat. Brown chicken on all sides. Remove and set aside.
- 4In the same pot, sauté onion, pepper, and garlic until soft and fragrant.
- 5Add tomato sauce, wine, capers, olives, bay leaf, and broth. Stir well.
- 6Return chicken to the pot. Bring to a simmer, cover, and cook on low heat for 45 minutes to 1 hour, or until chicken is tender.
- 7Remove bay leaf. Taste and adjust seasoning if needed.
- 8Stewed Plantains:
- 9Peel and slice ripe plantains into thick rounds.
- 10In a small saucepan, melt butter over medium heat. Add plantains and cook for 2–3 minutes.
- 11Sprinkle in brown sugar, cinnamon, and a pinch of salt.
- 12Pour in water, reduce heat, and simmer for 10–15 minutes until plantains are soft and coated in syrupy glaze.
