Ingredients

  • 2 cups cooked pernil (roast pork), shredded 🐖
  • 1 cup fresh pineapple, diced 🍍
  • 2 cups shredded mozzarella or Mexican cheese blend 🧀
  • 0.5 cup red onion, finely sliced 🧅
  • 1 tablespoon cilantro, chopped 🌿
  • 1 tablespoon olive oil 🫒
  • 4 large flour tortillas 🌮
  • Optional: sour cream or guacamole for dipping 🥑🍶

Instructions

  1. 1Heat the skillet or comal over medium heat and add olive oil. 🫒🔥
  2. 2Sauté the red onions for 2–3 minutes until soft. Add the pernil and cook until warmed through. Stir in the pineapple chunks and cook for another 2 minutes. 🍍🧅
  3. 3Remove from heat and sprinkle in the cilantro. 🌿
  4. 4Warm a tortilla in a clean skillet. On one half, add a generous scoop of the pork-pineapple mixture and top with shredded cheese. 🧀
  5. 5Fold the tortilla over and cook 2–3 minutes per side, pressing lightly with a spatula until golden brown and cheese is melted. 🔄✨
