Tres Leches Pancakes with Coconut Whipped Cream
Story
One rainy morning in San Juan, Don Luis found himself humming an old bolero while flipping pancakes on his sizzling griddle. He had promised his grandson a special treat—a twist on abuela’s famous tres leches cake. As the aroma of warm vanilla and cinnamon filled the kitchen, he chuckled, “Why wait for dessert when you can have it for breakfast?” 😄 Inspired by the soft drizzle outside and memories of Sunday family brunches, Don Luis poured a tres leches blend over fluffy pancakes and topped them with a dreamy coconut whipped cream. With each bite, it was like taking a mini-vacation to the island of sweetness. 🌴✨ Time, Nutrition & Cost

Instructions

- 4Soak the Pancakes: While still warm, pour a few tablespoons of the tres leches mix over each pancake stack. Let it soak in gently. ✨
- 5Whip the Coconut Cream: Scoop out the solid part of the chilled coconut milk into a mixing bowl. Beat with powdered sugar and vanilla until fluffy (about 2–3 minutes).
- 6Serve & Top: Add a generous dollop of coconut whipped cream on top of your pancakes. Garnish with toasted coconut flakes or fresh fruit if desired. 🍓🥥
