Ingredients

  • 0.5 lb salted cod (bacalao), soaked overnight and shredded
  • 3 medium potatoes, peeled and diced small
  • 1 small onion, finely chopped
  • 0.5 red bell pepper, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp oregano or parsley (optional)
  • Pinch of red pepper flakes (optional for a kick!)
  • 2 tbsp olive oil or butter for sautéing
  • 4 eggs (1 per person)
  • Serve with a glass of cold orange juice or a mango smoothie!

Instructions

  1. 1Prep the Bacalao 🌊
  2. 2After soaking overnight, drain and shred the bacalao. Boil it for 10 minutes to remove excess salt, then set aside.
  3. 3Cook the Potatoes 🥔
  4. 4In a skillet over medium heat, add 1 tbsp oil and cook diced potatoes until golden and fork-tender (about 10–12 min). Remove and set aside.
  5. 5Sauté Veggies 🧅🫑
  6. 6In the same skillet, add the rest of the oil. Sauté onions, peppers, and garlic until soft and fragrant (3–5 min).
  7. 7Mix It Up 🥄
  8. 8Add the shredded bacalao and cooked potatoes to the skillet. Stir well to combine. Season with pepper, herbs, and a pinch of red pepper flakes if desired.
  9. 9Fry the Eggs 🍳
  10. 10In a separate non-stick pan, fry 4 eggs sunny side up or to your liking. Sprinkle with a little salt.
