Ingredientes
- para the Pernil (Roast cerdo Shoulder):
- 5–6 lb bone-in cerdo shoulder
- 8 cloves ajo, peeled
- 1 tbsp sal
- 1½ tsp pimienta negra
- 1 tbsp dried oregano
- 1 tbsp ground cumin
- 1 packet sazón con achiote
- 2 tbsp white vinegar
- 2 tbsp aceite de oliva
- 1 tsp paprika ahumada (opcional)
- para the Stewed Chickpeas:
- 1 can (15 oz) chickpeas (garbanzos), drained
- 0.5 cup sofrito (homemade o store-bought)
- 0.5 pequeño cebolla, picado en cubos
- 0.5 green pepper, picado en cubos
- 1 tsp aceite de oliva
- 0.5 tsp adobo seasoning
- 1 packet sazón
- 0.5 cup tomate sauce
- 0.5 cup water
- fresco cilantro (opcional termina)
Instrucciones
- 1Prepare the Pernil:
- 2Mash ajo, sal, pepper, oregano, cumin, sazón, vinegar, y aceite de oliva into a thick marinade paste.
- 3Score the fat cap de the cerdo y make deep slits all over.
- 4Rub the marinade generously all over the cerdo, pushing into the slits.
- 5Cover y marinate in the fridge at least 4 hours o overnight.
- 6Preheat oven to 350°F (175°C). Place cerdo in a roasting pan, cover con foil.
- 7Roast covered para 3½ hours, then uncover y roast an additional hour, o until skin crisps up into beautiful chicharrón.
