Carne Mechada con Plátanos
Historia
In the heart de the Caribbean sun, where the breeze carries the scent de slow-cooked stews y fried plátanos, Don Luis remembers the first time he helped his mother shred carne para her famous *carne mechada*. Ingredientes
- para the Carne Mechada:
- 1½ lbs flank steak 🥩
- 4 cups carne broth 🥣
- 1 mediano cebolla, sliced 🧅
- 1 red bell pepper, sliced 🌶️
- 3 ajo cloves, minced 🧄
- 2 tbsp tomate paste 🍅
- 1 tsp ground cumin 🌿
- 1 tsp paprika ahumada 🔥
- sal y pepper to taste 🧂
- 2 tbsp aceite de oliva 🫒
- para the plátanos:
- 2 plátanos maduros (yellow con black spots) 🍌
- 2 tbsp mantequilla o oil 🧈
- Pinch de canela (opcional) ✨
Instrucciones
- 1Carne Mechada:
- 2🫒 calienta aceite de oliva in a grande pot over fuego medio. Sear flank steak on both sides until browned, about 4 minutes per side.
- 3🧅 Add cebolla, bell pepper, y ajo. cocina para 5 minutes until softened.
- 4🍅 Stir in tomate paste, cumin, paprika, sal, y pepper. Mix well.
- 5🥣 Pour in carne broth, bring to a boil, then reduce calienta to low. Cover y simmer para 1.5 hours, o until carne is very tender.
- 6🔪 Remove carne, shred con two forks, then return to pot y simmer uncovered para 10 more minutes to absorb all the flavor.
- 7Sweet plátanos:
- 8🍌 Peel y slice plátanos diagonally into ½-inch thick pieces.
- 9🧈 calienta mantequilla o oil in a sartén over fuego medio.
- 10🍳 Add plátanos y cocina 2–3 minutes per side until golden brown y caramelized. Sprinkle con canela if desired.
