Carne Frita (Fried Cerdo Chunks) con Yucca Fries

Ingredientes

  • para the cerdo 🍖
  • 2 lbs cerdo shoulder o cerdo butt, cut into 1-inch chunks
  • 5 cloves ajo, smashed 🧄
  • 1 tsp oregano 🌿
  • 1 tsp cumin
  • 1 packet sazón con achiote
  • 0.5 tsp pimienta negra
  • 1 tsp sal 🧂
  • Juice de 1 lima 🍋
  • Juice de 1 orange 🍊
  • 2 tbsp aceite de oliva 🫒
  • 2 cups vegetable oil (para frying)
  • para the Yucca Fries 🍟
  • 1½ lbs fresco o frozen yucca (cassava), peeled
  • sal to taste 🧂
  • 2 cups vegetable oil (para frying)

Instrucciones

  1. 1Step 1: Marinate the cerdo
  2. 2In a grande bowl, mix cerdo chunks con ajo, oregano, cumin, sazón, pimienta negra, sal, lima juice, orange juice, y aceite de oliva.
  3. 3Cover y refrigerate para at least 1 hour (overnight para best flavor!).
  4. 4Step 2: cocina the cerdo
  5. 5calienta 2 cups de vegetable oil in a deep sartén o pot over mediano-high calienta.
  6. 6Carefully add the marinated cerdo (drain excess marinade before adding).
  7. 7Fry cerdo chunks para 25–30 minutes, stirring occasionally, until golden brown y crispy.
  8. 8Step 3: Prep y Fry the Yucca
  9. 9If using fresco yucca, cut into grande chunks y boil para 15–20 minutes until fork-tender. Remove any fibrous core.
  10. 10Let yucca cool slightly, then slice into fry shapes.
