Alcapurrias with a Spicy Tamarind Sauce
Prep: 35 mins
Authentic recipes
Puerto Rico’s beachside fritter, yautía and green banana dough, stuffed with picadillo.
Alcapurrias are beach food, roadside kiosk food, Sunday-in-Piñones food. Dough made from hand-grated yautía (taro) and green banana, stuffed with meat picadillo (or crab, chicken, jueyes), wrapped torpedo-shaped and fried until golden and crispy outside, soft inside. It’s one of the most uniquely Puerto Rican foods that exists, no real equivalent in other cuisines.
Don Luis has 12 alcapurria recipes, beef, chicken, jueyes (land crab), vegetarian, and baked (for those who don’t want to fry). Each includes the method to keep the dough from falling apart while frying and the exact yautía-to-green-banana ratio.
All 12 of Don Luis’s alcapurria recipes
Part of a collection spanning 100+ years of family recipes across three generations, collected and tested over 30+ years in the kitchen. Dough ratios and fry methods keep the coastal kiosk flavor of Piñones and Loíza, tested so the alcapurria holds together while frying.
