- 6 small corn tortillas (or your fave taco shells)
- Neutral oil for frying (canola or avocado)
Instructions
- 1Make the Alcapurria Dough (masa):
- 2Peel and grate the green bananas and yautía using a box grater or food processor. Squeeze out excess liquid. Add garlic, smoked paprika, and a pinch of salt. Mix well until dough is smooth and pliable.
- 3Form the Crispy Base:
- 4In a non-stick skillet with a bit of oil, form small flat discs of the dough (like mini-tostones) and pan-fry until golden and crisp on both sides—about 3–4 mins per side. These will be the crunchy base inside your tacos. Set aside on paper towels.
- 5Scramble the Eggs:
- 6In another pan, sauté onions until translucent. Add eggs, season with salt and pepper, and scramble gently. Mix in cheddar cheese at the end.
