Chocolate Coconut Chia Pudding

Prep: 5 minutesTotal: 4 hours 5 minutes

Story

As Don Luis stirred the rich cocoa powder into the creamy coconut milk, he smiled. 🍫🥥 “Chia pudding is one of those simple but magical recipes,” he said. “A little patience, the right balance of flavors, and you get a treat that’s both delicious and healthy.” With a touch of coconut, vanilla, and dark chocolate, this pudding is a luscious, dairy-free delight that’s as satisfying as it is nutritious. ✨

Ingredients

  • 1 ½ cups coconut milk (full-fat for extra creaminess)
  • 0.5 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp honey or maple syrup
  • 0.25 tsp cinnamon (optional)
  • 0.33 cup chia seeds
  • 0.25 cup shredded coconut (plus extra for topping)
  • 2 tbsp dark chocolate shavings (for garnish)

Instructions

  1. 11️⃣ Mix the Base – In a bowl, whisk together coconut milk, vanilla, cocoa powder, honey, and cinnamon until well combined. 🍯🍫✨
  2. 22️⃣ Add the Chia Seeds – Stir in chia seeds and shredded coconut, mixing well to distribute evenly. 🌱🥥
  3. 33️⃣ Let it Set – Cover and refrigerate for at least 4 hours (or overnight). Stir after 30 minutes to prevent clumping. ❄️⏳
  4. 44️⃣ Serve & Enjoy – Once thickened, give it a final stir. Top with dark chocolate shavings, toasted coconut, or fresh berries. 🍓🥥🍫
