Guava and Coconut Chia Pudding

Prep: , Cook Time, & DetailsCook: , & DetailsTotal: 10 mins prep + chill time

Story

One sunny afternoon, Don Luis sat on his porch with a guava in hand and a coconut at his feet. It reminded him of his childhood summers in the tropics—where the air smelled sweet, the breeze hummed like a lullaby, and the elders always had a cold treat ready after lunch. So, with a warm smile under his mustache and his leather-accented jean apron proudly tied, Don Luis made magic. Mixing guava nectar with creamy coconut milk, and adding chia seeds for a little texture surprise, he created a tropical dessert so light, yet full of flavor, that even the neighborhood kids lined up by the screen door waiting for their turn.

Ingredients

  • 1 cup coconut milk (full fat for creaminess)
  • 1 cup guava nectar (unsweetened or lightly sweetened)
  • 0.33 cup chia seeds
  • 1 tbsp honey or agave syrup (optional, adjust to taste)
  • Pinch of salt
  • Fresh fruit for topping: strawberries, kiwi, or pineapple (optional)
  • Toasted coconut flakes for garnish (optional but delicious)

Instructions

  1. 1🥣 In a medium bowl, combine the coconut milk, guava nectar, honey, and a pinch of salt. Stir well.
  2. 2🌱 Add in the chia seeds and whisk to distribute evenly.
  3. 3⏳ Let it sit for 5 minutes, then whisk again to prevent clumping.
  4. 4❄️ Cover and refrigerate for at least 4 hours (or overnight) until the pudding thickens.
  5. 5🍓 Before serving, give it a gentle stir and top with fresh fruit and toasted coconut flakes.
