Alcapurrias with Mango Habanero Sauce

Ingredients

- 4 green bananas 🍌 (peeled)
- 1 lb yautía (malanga) 🥔
- 1 tsp adobo seasoning 🧂
- 1 tsp sazón with annatto 🌶️
- 1 tbsp achiote oil (or olive oil) 🟠
- Filling
- 0.5 lb ground beef or pork 🐖
- 1 tbsp sofrito 🧅🌿
- 1 tsp tomato paste 🍅
- 1 tsp capers (optional) 🫒
- Salt and pepper to taste 🧂
- Mango Habanero Sauce
- 1 ripe mango (peeled and diced) 🥭
- 1 habanero pepper (seeded for less heat) 🌶️
- 1 tbsp honey 🍯
- Juice of 1 lime 🍋
- Pinch of salt 🧂
- For Frying
- Neutral oil (canola or vegetable oil) 🌻
Instructions
- 1Make the Masa
- 2Grate the bananas and yautía using a fine grater or food processor. Mix together in a large bowl with adobo, sazón, and achiote oil. Set aside.
- 3Prepare the Filling
- 4In a pan over medium heat, cook sofrito for 1 min. Add ground meat, tomato paste, and capers. Season with salt and pepper. Cook until browned and juicy. Let it cool.
- 5Shape the Alcapurrias
- 6On parchment or plastic wrap, spread about 2 tbsp of masa into an oval. Add 1 tbsp of filling in the center. Use the paper to fold and shape into a log. Seal the edges well.
- 7Fry the Alcapurrias
- 8Heat oil to 350°F (175°C). Fry 2–3 at a time until golden brown and crispy, about 6–8 minutes each. Drain on paper towels.
- 9Make the Mango Habanero Sauce
- 10Blend mango, habanero, honey, lime juice, and salt until smooth. Chill before serving.
