Ingredientes

  • 4 green guineos 🍌 (peeled)
  • 1 lb yautía (malanga) 🥔
  • 1 tsp adobo seasoning 🧂

  • 1 tbsp achiote oil (o aceite de oliva) 🟠
  • Filling
  • 0.5 lb ground carne o cerdo 🐖
  • 1 tbsp sofrito 🧅🌿
  • 1 tsp tomate paste 🍅
  • 1 tsp capers (opcional) 🫒
  • sal y pepper to taste 🧂
  • mango Habanero Sauce
  • 1 ripe mango (peeled y picado en cubos) 🥭
  • 1 habanero pepper (seeded para less calienta) 🌶️
  • 1 tbsp honey 🍯
  • Juice de 1 lima 🍋
  • Pinch de sal 🧂
  • para Frying
  • Neutral oil (canola o vegetable oil) 🌻

Instrucciones

  1. 1Make the Masa
  2. 2Grate the guineos y yautía using a fine grater o food processor. Mix together in a grande bowl con adobo, sazón, y achiote oil. reserva.
  3. 3Prepare the Filling
  4. 4In a pan over fuego medio, cocina sofrito para 1 min. Add ground meat, tomate paste, y capers. Season con sal y pepper. cocina until browned y juicy. Let it cool.
  5. 5Shape the Alcapurrias
  6. 6On parchment o plastic wrap, spread about 2 tbsp de masa into an oval. Add 1 tbsp de filling in the center. Use the paper to fold y shape into a log. Seal the edges well.
  7. 7Fry the Alcapurrias
  8. 8calienta oil to 350°F (175°C). Fry 2–3 at a time until golden brown y crispy, about 6–8 minutes each. Drain on paper towels.
  9. 9Make the mango Habanero Sauce
  10. 10Blend mango, habanero, honey, lima juice, y sal until smooth. Chill before serving.
