Puertorriqueño Pastelón (plátano Lasagna)

One Sunday afternoon, the kitchen smelled like sweet plátanos y savory spices. Ingredientes
- plátanos maduros (maduros) – 6 grande, peeled y sliced lengthwise
- Ground carne o ground turkey – 1½ lbs
- White cebolla – 1 pequeño, picado en cubos
- Bell pepper (red o green) – ½, picado en cubos
- ajo cloves – 3, minced
- tomate sauce – 1 cup
- Pitted green olives – ¼ cup, sliced
- Adobo seasoning – 1 tsp
- Sazón con achiote – 1 packet
- Oregano – ½ tsp
- Eggs – 3, beaten
- Shredded mozzarella o cheddar queso – 2 cups
- mantequilla o oil – para pan-frying plátanos
- sal & pepper – to taste
Instrucciones
- 1Prep the plátanos: Slice plátanos lengthwise into thin strips. In a grande sartén, calienta oil o mantequilla y fry plátanos until golden brown on both sides. reserva on paper towels.
- 2cocina the filling: In a grande pan, saltea cebolla, bell pepper, y ajo until fragrant. Add ground carne, breaking it apart as it browns. Drain excess fat if needed.
- 3Add tomate sauce, olives, adobo, sazón, oregano, y sal & pepper. Simmer para 10 minutes until the meat mixture thickens.
- 4Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
- 5Assemble the pastelón:
- 6Layer the bottom de the dish con fried plátanos.
- 7Add a layer de carne filling.
- 8Sprinkle queso generously.
- 9Repeat layers, finishing con plátanos on top.
- 10Pour beaten eggs over the top layer. This helps bind the layers together.
- 11Top con more queso y bake uncovered para 25–30 minutes until bubbly y golden.
- 12Cool para 10 minutes before slicing. sirve warm con a side salad o avocado slices 🥑.
