When Don Luis was a teenager growing up in Puerto Rico, you could catch him after school hanging out near *La Placita* with his buddies, music thumping in the background and the scent of sizzling meat floating through the air. It was always a toss-up: piraguas or tripletas? But if it had been a long day, the choice was easy. Tripleta. Always tripleta. He remembers the first time he had one—steak, pork, and ham all in one sandwich—stacked high on soft pan sobao, drizzled with ketchup-mayo, stuffed with crispy papitas. His friend dared him to add hot sauce. He did. 🔥 He never looked back. Ingredients

  • For the meats:
  • Thin-sliced steak – 1/2 lb
  • Smoked ham – 4 slices
  • Roasted pork (pernil or pulled pork) – 1/2 cup
  • Adobo seasoning – 1 tsp
  • Garlic powder – 1/2 tsp
  • Olive oil – 1 tbsp
  • For the spicy mayo:
  • Mayonnaise – 1/4 cup
  • Sriracha – 1 tbsp (adjust to taste)
  • Lemon juice – 1 tsp
  • Garlic (grated) – 1 clove
  • Sandwich assembly:
  • Pan sobao or soft hoagie rolls – 2
  • Swiss cheese – 2 slices
  • Dill pickles – 4 slices
  • Shredded lettuce – 1/2 cup
  • Tomato slices – 4
  • Shoestring potato sticks – 1/2 cup

Instructions

  1. 1Season and cook the steak with adobo, garlic powder, and olive oil. Sear in a hot pan until cooked through. Set aside.
  2. 2In the same pan, warm the ham and roasted pork together until just crispy on the edges.
  3. 3Mix the spicy mayo by combining mayo, sriracha, lemon juice, and grated garlic. Stir until smooth.
  4. 4Toast the bread lightly on a griddle or pan.
  5. 5Assemble your tripleta:
  6. 6Spread spicy mayo on both sides of the bread
  7. 7Layer with steak, roasted pork, ham
  8. 8Add Swiss cheese, pickles, lettuce, and tomatoes
  9. 9Finish with a generous handful of potato sticks
  10. 10Press slightly, slice in half, and serve warm with extra napkins! 😋
