Sopa de Pollo (Chicken Soup)

A squeeze of lime, a sprinkle of fresh cilantro, and a warm tortilla on the sideโevery bite felt like home. Now, Don Luis keeps that tradition alive, adding his own twist to bring out even deeper, richer flavors while staying true to its comforting roots.
Ingredients
- For the Broth:
- 1 whole chicken (cut into pieces) or 4 bone-in chicken thighs ๐
- 10 cups water ๐ง
- 1 large onion, quartered ๐ง
- 3 garlic cloves, smashed ๐ง
- 2 carrots, chopped ๐ฅ
- 2 celery stalks, chopped ๐ฟ
- 1 bay leaf ๐
- 1 tbsp salt ๐ง
- 0.5 tsp whole black peppercorns โซ
- 0.5 tsp cumin ๐ฟ
- 0.5 tsp oregano ๐ฑ
- 0.25 tsp turmeric (Don Luisโs special touch for color and depth) โจ
- For the Soup:
- 2 tbsp olive oil ๐ซ
- 2 additional carrots, sliced into rounds ๐ฅ
- 2 celery stalks, chopped ๐ฟ
- 1 large potato, cubed ๐ฅ
- 0.5 cup calabaza (butternut squash or pumpkin), diced (optional) ๐
- 1 corn on the cob, cut into 2-inch pieces ๐ฝ
- 0.5 cup rice or small pasta (like fideos or orzo) ๐
- 1 tbsp tomato paste ๐
- 0.5 tsp ground cumin ๐ฟ
- 0.5 tsp smoked paprika ๐ถ๏ธ๐ฅ
- 0.25 tsp black pepper ๐ง
- 0.5 cup chopped cilantro (plus extra for garnish) ๐ฟ
- Juice of 1 lime ๐
- For Serving:
- Lime wedges ๐
- Avocado slices ๐ฅ
- Warm corn tortillas ๐ฎ
Instructions
- 11๏ธโฃ Prepare the Chicken Broth ๐๐ฅ
- 2In a large pot, add the chicken ๐, water ๐ง, onion ๐ง , garlic ๐ง, carrots ๐ฅ, celery ๐ฟ, bay leaf ๐, salt ๐ง, peppercorns โซ, cumin ๐ฟ, oregano ๐ฑ, and turmeric โจ.
- 3Bring to a boil over medium-high heat, then reduce to low and simmer for 45-60 minutes, skimming any impurities that rise to the surface.
- 4Remove the chicken ๐ and set it aside to cool. Strain the broth, discarding the solids, and return the clear broth to the pot.

- 6In the same pot, heat olive oil ๐ซ over medium heat. Sautรฉ the sliced carrots ๐ฅ and celery ๐ฟ for about 3 minutes until slightly softened.
- 7Stir in the tomato paste ๐ , cumin ๐ฟ, smoked paprika ๐ถ๏ธ, and black pepper ๐ง. Cook for 1-2 minutes to enhance the flavors.
- 8Add the reserved broth, potatoes ๐ฅ, calabaza ๐, and corn pieces ๐ฝ. Bring to a gentle boil.
- 9Stir in the rice ๐ (or pasta) and simmer for 15-20 minutes, or until the vegetables and rice are tender.
