Ingredients

  • For the Empanadas:
  • 2 cups cooked shredded chicken 🍗
  • 1 small onion, finely diced 🧅
  • 0.5 red bell pepper, diced 🌶️
  • 2 cloves garlic, minced 🧄
  • 1 tsp smoked paprika 🌿
  • 1 tsp ground cumin ✨
  • 0.5 tsp salt 🧂
  • 0.25 tsp black pepper ⚫
  • 1 tbsp olive oil 🫒
  • 0.25 cup chicken broth 🍲
  • 0.5 cup shredded mozzarella or cheddar cheese (optional) 🧀
  • 8 empanada dough discs (store-bought or homemade) 🥟
  • 1 egg, beaten (for egg wash) 🥚
  • For the Chimichurri Sauce:
  • 1 cup fresh parsley, chopped 🌿
  • 2 cloves garlic, minced 🧄
  • 0.5 tsp red pepper flakes (optional) 🌶️
  • 1 tsp dried oregano 🌿
  • 0.25 cup red wine vinegar 🍷
  • 0.5 cup olive oil 🫒
  • 0.5 tsp salt 🧂

Instructions
